Caramelised sweet potato & plantain (Banana)

side dish, snack or party nibble

Here’s something different to enjoy with drinks on a warm summer evening.


Ingredients

1 plantain - ripe -yellow skin (if you cannot get Plantain,  a banana is sufficient)

225g/8oz orange sweet potatoes

2 tbsp rapeseed oil

black pepper to season

2 tbsp honey

juice of 1 lemon

pinch of sesame seeds


Directions

Preheat oven to 200°C/fan 180°C/390°F/gas 6.

1. Peel the plantain, cut into diagonal pieces and place in a bowl.

2. Cut the sweet potato into wedges, add to the plantain, drizzle with the rapeseed oil, season and mix.

3. Tip onto a baking tray and roast in the oven for 20-25 minutes until golden.

4. Mix the honey and lemon juice, pour over the sweet potatoes and plantain and return them to the oven for 5 minutes or a little longer if you prefer more crunch.

Remove from the oven and serve scattered with sesame seeds.
