Chickpea Fudge with Chocolate Layer

Chickpea Fudge


Chickpea fudge layer

1 tin cooked and drained chickpeas

1/4 cup natural peanut butter 

1 tsp cinnamon

1/4 cup + 1 tbsp coconut milk 

1/4 cup honey 

1 tsp vanilla extract 

2 tbsp coconut oil

Chocolate Layer

5 tbsp coconut oil 

2 tbsp honey 

2 tbsp cocoa powder 

Pinch of salt


Chickpea fudge layer

  • Line a dish (approximately 26 cm x 16 cm) with cling wrap. Set aside.
  • Remove the skins from the chickpeas.
  • Blend the chickpeas. Add the peanut butter, coconut milk, honey, coconut oil, vanilla extract and cinnamon and blend together into a smooth paste. 
  • Pour the mixture into the dish. Place in the freezer for 2 to 3 hours to set.

Chocolate layer

  • Heat the coconut oil and honey. Whisk in the cocoa powder and pinch of salt. 
  • Pour over the chickpea fudge and place in the freezer for 10 minutes 7.
  • Remove the fudge from the tray and cut it into bite size chunks.


To cut through the fudge cleanly – dip the knife in hot water and wipe it clean on a cloth before cutting.
