Gluten, Egg & Dairy Free Lasagne Style Meal

Gluten, Egg & Dairy Free Lasagne Style Meal With Loads Of Vegetables


Ingredients 


1 lb of mince

I tin of tomatoes

1 Large Carrot

1 onion, 

3 garlic cloves, 

broccoli,

2 fresh tomatoes 

Pinch of oregano. 

Mince beef (1lb) 

1 Egg Plant

1 courgette


Directions 

  • Brown the mince
  • Blend together the tin tomatoes, carrot, onion, garlic cloves and broccoli until it becomes a sauce
  • Add the sauce to the browned mince and  bring to boil and simmer for 30 minutes
  • Slice 2 fresh tomatoes and slice length ways egg plant and courgette. 
  • Layer a lasagne dish with egg plant and a small layer of meat sauce; add courgette and tomato layer and keep repeating this until veg and meat sauce is used up making many layers. 
  • Place tin foil over the top and bake in oven at 140 degrees for roughly one hour. 

If you can't get your kids to eat the sliced egg plant and courgette blend them with the sauce and add to a side of pasta or rice.
