Gluten Free Daly's Cod and Salmon Goujons Recipe

Cod and Salmon Goujons Recipe

This family favourite meal or snack is an easy recipe to do with the kids. A delicious, healthy snack or make it into a meal by adding sweet potato wedges and salad.

Ingredients

  • 1 fillet Daly’s fresh Cod
  • 1 fillet Daly’s fresh Salmon
  • 2 eggs
  • Handful grated Parmesan cheese
  • Sprinkle flour (use gluten free plain flour if required)
  • 100g ground almonds

Method

Preheat oven to 180 degrees

Cut fresh fish in to finger size pieces

Place ground almonds in oven and roast for 3 – 4 minutes until golden brown. Remove, then mixed with Parmesan cheese.

Beat 2 eggs in a separate bowl.

Dip each fish pieces into the flour, then the egg, then the nut/Parmesan mix.

Place fish on a lined baking tray and cook for 15 – 20 minutes or until cooked through.

Remove from the oven, serve and enjoy.
