Gluten Free Garlicky Chicken & Potato Tray Bake

I love getting the free booklets in Lidl with the recipe ideas for their specials each week.

This week one of my gluten free on a budget meals was garlicky chicken & potato tray bake. The entire family loved the meal so much they are asking for it again this weekend. A meal for 4 cost roughly €5!! Now that's a gluten free meal on a budget - I love it!!!

Ingredients

1 packet of chicken thighs or drumsticks

1 large sweet potato, peels and cut into chunks

4-6 potatoes, peels and cut into wedges

3 red onions, peeled and cut into fours

1 bulb of garlic, peeled left whole

2 cm knob of fresh ginger, cut into thick sticks

1 red pepper, de-seeded and cut into 8 pieces

3 tbsp olive oil

1 tbsp Kania mild curry powder (I didn't have this so I mixed 1 tsp of cummin and paprika)

Salt and pepper to taste


Method

  • Preheat oven to 180 degrees
  • Add all the ingredients into a baking tray
  • Sprinkle the oil, curry powder and seasoning over the mixture
  • Toss in the tray and bake for 20 minutes
  • After 20 minutes, turn all the ingredients in the baking tin
  • Cook for a further 35 minutes or until golden brown (mine took about 70 minutes as we like the potatoes crispy)
