Gluten Free Pork Belly with Ginger and Spring Onions

No need to waste money on a take out with this delicious Asian style gluten free meal, perfect for a dinner party or family meal.

  • 6 Pork Belly Strips
  • 2 cloves of garlic, peeled and sliced
  • 1 inch fresh ginger, peeled and grated
  • 6 spring onions, trimmed and sliced
  • 20ml tamari sauce (gluten free soy sauce)
  • 1 tbsp honey
  • 75ml water
  • 400g basmati rice
  • 2 eggs, beaten & scrambled

  • Preheat oven to 170 degrees.
  • Cook rice as normal and let cool.
  • Place pork belly in oven proof dish, with water, soy, honey, garlic & ginger.
  • Bring to gentle simmer on the hob for 10 minutes then cover with lid and place in oven for 90 minutes.
  • When pork is soft and tender remove from oven and add spring onion.
  • Put lid back on and place back into oven for a few minutes(if you prefer like me to have it a little crispy - remove the lid after 70 minutes).
  • Add cooked rice to wok with a small amount of oil, splash some tamari sauce and add the scrambled egg.
  • Serve pork belly over the cooked rice.
