Gluten Free Zucchini Chips Recipe

It's been a busy, enjoyable summer for me so far but  I am already feeling the effects of over indulging. I haven't spent as much time in the kitchen as I usually do because we have been out and about enjoying the sunshine, but now I need to get back to a little routine as my stomach is feeling the effects. 

Crisps are a yummy easy snack to take to the beach as I found the fresh veg wilted or got too warm and soggy, but crisps are high in fat too. 

Zucchini chips so simple to make and so yummy:

Place finely chopped zucchini in a bowl. Drizzle olive oil and lightly toss to coat; season with salt and mixed herbs. Spread evenly onto a baking sheet. Bake in the preheated oven until lightly browned, about 20 minutes.

A delicious, healthy alternative to crisps to add to your dip or snack alone.
